01 · Grinding

It starts at the grinder.

Every dose, weighed as it grinds.

The grinder weighs each dose while it grinds. It stops at 18 grams, before we pull the shot.

A timer guesses the dose. The scale measures it, so every shot starts with the same 18 grams.

02 · Grinders

Four grinders, one job each.

03 · The Machine

The Black Eagle Maverick.

We pull every shot on a Victoria Arduino Black Eagle Maverick. Baristas at the World Barista Championship compete on the same line of machine. It holds the water temperature steady on every group head, all morning.
